250gr of spiced roasted chestnut shells with kitchen salt + 2L water- boiling 15 minutes. Strain, cool to 20º.
Added 50gr Na2CO3 + 15gr Vit C.
Developed at 21º , 40 min, 8 agit/1st min -10 agit/3min
