Developing with Pomegranate

Scientific name: Punica granatum L. The pomegranate is one of the seven fruits for which the land of Israel was blessed. Among Jews of Western origin there is the custom of placing fruit seeds under the pillow at the passage of the Jewish New Year to attract luck, health and money next year. Many, for the same reason, eat fruit seeds at Christmas and New Year's Eve. The Prophet Muhammad said "eat pomegranate, to get rid of envy and hatred" !!!

The importance of the pomegranate is millenarian, appears in the biblical texts and is associated with passions and fecundity. The Greeks regarded it as a symbol of love and fecundity, and the pomegranate tree was consecrated to the goddess Aphrodite, for it was believed in her aphrodisiac powers.

The main medicinal properties of the pomegranate have been known since antiquity and are described in the Ebers Papyrus.

It is rich in antioxidant substances (flavonoids, pro-vitamin A and vitamin C) as well as tannins, substance responsible for the rough taste sensation of pomegranate, which help control cholesterol levels. It has an anti-inflammatory, digestive and purifying the blood. As the bark contains 30% tannin, it can still be used to tan leather.

In Portugal the tradition demands that you be present at the table on the Day of Kings. In my house, tradition tells me to keep the shells, because their content in tannins allows me these revelations J

1,5 l of water + 325gr of pomegranate peels - leave to boil for 10 minutes and then strain and let cool at room temperature.

To 1 liter of the mixture, I added 72gr Sodium Carbonate and then, 9gr of Vitamin C and let it stabilize for 10 minutes. The mixture reached 23º.

At that point, I developed for 30 minutes, shaking in the first minute and then doing 3 shakes every 3 minutes.
